Recipe: One Bowl Mung Bean Meal Recipes from The Kitchn | The ...

It happens every year at this time and you know it. Whatever your normal ? and hopefully healthy ? eating pattern is, you lose it.

Normally I have a very balanced diet, which not only means it's balanced nutritionally, but it's balanced emotionally: I manage to try everything I want while rarely over-indulging. Then the holidays hit and gatherings fill up the calendar. On one hand I can't complain; I've managed to make a career out of encouraging people to cook and eat together, and it doesn't happen more than at the end of each calendar year. However, these gatherings rarely showcase light, healthy foods. Don't get me wrong: I like a good boozy cup of eggnog and a slice of roast beef as much as the next guy, but everybody needs a break.

Take Tuesday night for example: I went into a dinner party situation wanting to eat light and not drink alcohol. Two blinks of the eye later I found a margarita in one hand and a goat cheese-stuffed, bacon-wrapped date in the other. Pretty soon there were pork loin sandwiches and chile rellenos. There was simply no escape.

All you can do is plan to eat differently when possible. This is a time, more than ever, to retreat to the one-bowl vegetarian meal. Lately, that's meant it's all about mung beans at my house. Sometimes the servings are small, just enough to tide me over.

I'm offering this recipe, like I do with many of my recipes, simply to guide you. Of course, if you are missing any of the ingredients like apples or avocados, replace them with something else: some leftover stir-fried greens, a chopped up boiled egg, sky's the limit. This is a good opportunity to clear the decks and the formula couldn't be easier.

In terms of the sprouted mung beans, they are usually easy to find at any large health food store or Whole Foods. I like them because they don't really require much cooking, and they feel so nourishing. If you can only find regular mung beans, don't fret. Simply cook the beans according to the package's instructions then drain and toss with the other salad ingredients.

The point here is to give your system a break and of course there's no one recipe for this practice. Just allow your system to breathe, and take refuge in a bowl of clean food. We have a whole month of holiday eating ahead, so pace yourself. Have a bowl of mung beans, then brace yourself for the next onslaught of holiday cheer.

One Bowl Mung Bean Meal

Serves 4

1 cup sprouted mung beans
3 cups water or broth
4 chopped green onions, white and pale green parts only
2 ribs celery, trimmed and sliced cross-wise into c-shapes
1 apple, diced
1 ripe avocado, sliced
1/3 cup chopped almonds
1/4 cup olive oil
3 tablespoons loosely packed chopped Italian parsley
2 tablespoon lemon juice
sea salt and freshly ground black pepper, to taste

Bring the water to boil in a medium saucepan. Add the mung beans and gently boil for 5 minutes. Remove the pan from the heat. Cover and let stand for at least 4 minutes and up to 8 minutes, depending on the desired texture. Drain.

Mix the mung beans with the green onions, celery, apple, avocado, almonds, olive oil, parsley, lemon juice and salt and pepper. Toss well. Divide between two bowls and serve.

Notre Dame beats eighth-ranked Kentucky 64-50

SOUTH BEND, Ind. (AP) ? Notre Dame's experience and raucous home crowd were too much for eighth-ranked Kentucky and its heralded freshmen.

Junior guards Eric Atkins and Jerian Grant paced the Fighting Irish to a 64-50 victory Thursday night.

Atkins led the Fighting Irish with 16 points, Grant had 13 points and six assists and Jack Cooley added 13 points and 11 rebounds.

"The way our guards were controlling things, I didn't have to do a lot of coaching," Notre Dame coach Mike Brey said.

"Those guys were coaching the team. Eric Atkins running things, calling sets. When you have a veteran backcourt doing that, I just don't want to get in their way too much."

Notre Dame outplayed Kentucky (4-2) inside during the first half and held the Wildcats to a season-low 40 percent shooting for the game.

The Irish shot 48 percent, the best anyone against Kentucky this season.

The senior captains of the top-ranked Notre Dame football team, linebacker Manti Te'o, defensive end Kapron Lewis-Moore, tight end Tyler Eifert and tackle Zack Martin, got a standing ovation when they were introduced at halftime.

Students rushed the floor after the Irish wrapped up their second win over the Wildcats in the past 13 meetings.

Grant was disappointed in the fans' reaction, saying it wasn't like last season when the Irish upset top-ranked Syracuse.

"I'd rather not have them on the court. Last year was kind of a surprise game. This year, going into it, all of us were expecting to win this game," he said.

Kentucky coach John Calipari said his team didn't compete.

"They beat us to balls. They beat us around the basket. We didn't compete. We didn't execute. We didn't play together. There's a lot of things we didn't do," he said.

Julius Mays led Kentucky with 16 points and Nerlens Noel had 10.

"We came out a little shell-shocked and we started playing their game, which is slow down and half court. I think we're more of an up-tempo team," Mays said.

Two of Kentucky's heralded freshmen struggled. Archie Goodwin, who is averaging 19 points, was 1 of 7 shooting and finished with three points and Alex Polythress, who is averaging 18.4 points, had just one basket and was 1 of 3 from the free-throw line.

The Irish outrebounded Kentucky 33-27.

"We just knew that we could attack their bigs," Cooley said. "We watched film on them and knew that they had young bigs, and we could try to outsmart them instead of out-athleticizing them. Not really change how we play but just do what we do."

Brey said his team played with poise whenever Kentucky started rallying.

"When we don't have good offensive stretches, we're still able to concentrate defensively," he said.

Notre Dame led 36-25 at halftime. The lead was around 10 points when Cameron Biedscheid, who had 10 points, hit a 3-pointer to ignite a 10-0 run that included a 3-pointer by Grant and another jumper by Biedscheid and gave Notre Dame a 55-35 lead.

Notre Dame wore black uniforms with stitched green letters and numbers that were hard to see and the crowd wore black in support of the team.

Atkins said the victory should help the Irish during the season.

"It just boosts our confidence that we can do it against an elite team," he said.

Calipari said he hopes his team learned something in the loss.

"What I hope they figure out is you've got to do it together. You have to give Notre Dame credit. What a great crowd, with a great student body. They ground us out. That's how we usually play when we get up," he said.

Google has renewed its objections to a class action alleging that it intercepts emails and eavesdrops on online users in violation of California privacy laws.

In a brief filed in San Jose, the tech giant says two lead plaintiffs took ?isolated words out of context? and misapplied state law, which ?does not reach emails and electronic communications.?

Brad Scott and Todd Harrington sued Google in June for violation of the California Invasion of Privacy Act.

They claim that Gmail scans emails for words and content, and intentionally intercepts messages between non-Gmail subscribers and subscribers.

Travel Insurance Claims Need Written Proof of Loss | "If You Are ...

This is one of those blog posts I never thought I would have to write. I have a few more written which are currently in ?draft status?. I discussed these with a friend last week and she said:

?I am constantly amazed by the number of people who will not follow simple directions, can?t use common sense or even get written proof of a loss. It?s not like the insurance company is going to take their word for it.?

Here?s the situation:

After flying from the USA, a family arrived at their hotel in South Africa late at night prior to beginning their tour. Their luggage arrived in the airport intact. The luggage was loaded onto the shuttle bus and was delivered to their room shortly after they checked into their room. As it was late, they waited until the morning to inspect their luggage. The damage to one piece of their luggage was discovered the next morning around 6 am. They had to leave right away to catch the tour bus. They did not report the damage to anyone at the hotel or with the tour company.

After arriving back in the USA 2 weeks later they filed a damaged baggage claim and it was denied because there was no Written Proof of Loss.

Their travel insurance plan states (in part):

?Your duties after loss of or damage to property or delay of baggage;
b) promptly notify, in writing, either the police, hotel proprietors, ship lines, airlines, railroad, bus, airport or other station authorities, tour operators or group leaders, or any Common Carrier or bailee who has custody of Your property at the time of loss;?

In case I have anyone reading this who doesn?t understand what is required, here?s an explanation in plainer English: ?If you do not have any written report of loss including the date of the loss, why should the trip insurance company believe that something happened while you were on your trip??

Do you want to hear about another idiotic claim? Even if you said ?no? I?ll tell you anyway. This one holds the title for the stupidest claim we have ever received.

A couple returned to New York from their trip to Europe. They said the luggage area of the terminal was flooded so they couldn?t get their luggage. They called us and we told them they had to file a luggage damage claim with the airline. They refused saying it wasn?t worth their time. Hours later they were able to retrieve their luggage. They went home without filing any damage claim with the airline. Once again they called us on the way home and we told them they had to return to the airport to file a luggage damage claim with the airline. They refused for the same reason. As soon as they got home they said they threw all the contents of their luggage plus the luggage itself into the dumpster.

There was no written proof of loss so the claim was denied.

I have more examples, but I think you get the basic idea. When in doubt, document everything. You can always throw away what you don?t need after the claim is paid.

Words With Friends adds SMS game invites and notification improvements

One of the most popular cross-platform word games in the mobile world, Words With Friends, has received an update tonight with a few good parts to it. First off is an interesting (and we doubt very useful) feature that lets you invite friends to games via SMS messages. Zynga also lists improvements to the notification system -- something that has been pretty hit or miss for many users. Unfortunately the notification sticks with a pretty unsightly gray/white striped background, but that's just how things go. Lastly, the game now automatically adds a homescreen shortcut when it's installed -- a curious addition considering the Play Store lets you choose whether you want this or not as a global setting.

Cristino Naguiat Jr., head of the Philippine Amusement and Gaming Corporation (PAGCOR), was in Buenos Aires, Argentina earlier this month to address the Ey!12 gambling conference running alongside the South American Gaming Suppliers Expo (SAGSE). Referring to the Entertainment City resort casino mega-complex currently under construction in Manila Bay, Naguiat claimed it was not intended as a challenge to other regional gaming enclaves like Macau and Singapore. Naguiat told Yogonet the ?huge? Asian market meant the region?s gaming zones ?complement each other? more than they compete for customers. That said, Naguiat said the Philippines had ?much more to offer? than some of the other zones, such as ?historical places, beautiful beaches, a strategic location ? gaming is just a small part? of Entertainment City?s appeal.

Indeed, operators are reportedly already sniffing around Entertainment City in case the ongoing bribery investigation surrounding Kazuo Okada results in the suspension of Universal Entertainment?s gaming license. Amado Bagatsing, the chairman of the House of Representatives Committee on Games and Amusement, told reporters this week that there was a ?long line? of interested investors waiting to see if Universal?s license goes back on the auction block. Bagatsing declined to name names but claims there are at least four foreign firms that have expressed interest in the license. Nonetheless, Bagatsing challenged Okada to ?show your goodwill? by depositing the rest of the money needed to finish the construction of Universal?s Entertainment City project. ?If those were mere allegations, then I think [Okada] should proceed.?

It?s a good thing Taiwan?s Lienchang County government is taking its time developing its Matsu Island casino proposal, because the central government now says it won?t get around to passing the necessary casino legislation until June 2013 at the earliest. After that, Taiwan?s Central News Agency estimated the government could take another full year to consider applications and award a casino contract, then another three years to actually build the thing, meaning we could be well into 2017 by the time cards are in the air.

In the meantime, the anti-gambling forces in the Matsu region still haven?t gotten over losing the casino referendum this summer. They?ve now turned their rage against the region?s ?Matsu Gambling Tourism Year One? campaign, which includes plans to host a major mahjong competition starting in January with a grand prize of NT$1.5m (US $51.5k). Anti-Gambling Alliance members picketed the Lienchang County government?s announcement of the tournament, expressing their belief that since the central government hasn?t yet passed the casino laws, the tournament will be an illegal activity. Focus News Taiwan quoted lead zealot Ho Tsung-hsun saying casinos were ?hazardous to human hearts and destructive to families.? Presumably, Ho believes democracy is equally hazardous, because he clearly hasn?t accepted the fact that this is something the majority of Matsu residents want.

Last winter, Zone 5 Iowa, where I? live, became Zone 7 Iowa. Which is to say, for the first time in history the temperature did not go below zero. Kinda nice. Almost toasty.

Then we had a prolonged heat wave this summer. Not so nice. Drought.

But despite the fact that US. weather researchers say that our temps in the past year were the highest since record-keeping began in 1895, the need still exists here to escape the cold. (OK, so I?m a weather wimp.) And one of the few direct flights from this little burg goes to Phoenix

So inside of three hours or so I was relaxing by the pool at the Arizona Biltmore,? an ersatz Frank Lloyd Wright project designed to look midway between a Mayan temple and a mausoleum. At long last, I am warm again.

Phoenix Mountains

There's another bonus of staying at this architectural icon: quick access to the Phoenix Mountains desert preserve. Only 20 minutes from the pool.

OK, so I wanted to get warm, but this rocky incline was hot. Most sensible hikers were carrying water, but I figured I?d only get sweatier lugging the stuff up the mountainside. Six of one ?

Saguaro cactus

Now this place isn?t exactly gardenesque, but it is dang impressive. I don?t know how even cactus grows here. But all around were those wondrous saguaros, all looking as though they were being held up.

Did you know it takes about 75 years for that cactus to grow its first arm? This is another reason national parks in the West have trouble with a different kind of rustler ? cactus rustlers. Seems some McMansion owners don?t have the patience to wait for their own cacti to reach for the sky.

An hour of stumbling over mountain rubble in the baking sun, and I?d enjoyed about as much as I could stand. So I went back to the pool. Funny. I went to the pool the first day to get warm. But now I?m going there to cool off.

Canadians have had the option to buy a factory-unlocked iPhone for awhile, but liberating Apple's handset after the sale has been officially limited to Rogers and Fido customers. As long as MobileSyrup's leak is the real deal, though, subscribers to Bell and its Virgin Mobile branch can spring for an unlock as of today. That's good news for many, although the hurdle is once again the carrier's desire to keep customers from jumping ship. Those pursuing an unlock will supposedly need to be out of contract, skip any prepaid plans and pay a $75 fee -- in short, they're more likely to derestrict an old, well-worn iPhone than the iPhone 5 they bought last week. We'll just be happy to have another route to hardware independence, and hope that the mention of widened unlock eligibility in 2013 is more than just a rumor.

And there may be things about the area that the listing agent can't tell you, but you should know. If there is no certified or professional documentation for the potential concern, it is not something that the seller is likely going to disclose and the listing agent can't tell you what he does not know to be true about undisclosed potential issues like an old roof or AC system**. This would not be in his client's best interest. And you are not his client.

She demanded the Obama administration set up a ?government-sponsored program administered by the PBGC (the governments? Pension Benefit Guarantee Corporation).? She proclaimed that even ?private annuities are problematic.?

Such ?reforms? would effectively end private retirement accounts in America, Crone warns. ?These people want the government to require that ultimately all Americans buy these government annuities instead of saving or investing on their own. The Government could then take these trillions of dollars and redistribute it through this new national retirement system.?

Deputy Treasury Secretary J. Mark Iwry, who presided over the hearing, is a long-time critic of 401k plans because he believes they benefit the rich. He also appears to be one of the Administration?s point man on this issue.

?This whole issue is moving forward very quickly,? warns Crone. ?Already there is a bill requiring all businesses to automatically enroll their employees in IRA plans in which part of every employee?s paycheck would be automatically deducted and deposited into this account. If this passes, the government will be just one step away from being able to confiscate all these retirement accounts.?

NSC has taken the lead in warning the nation about this new government onslaught and is plotting ways to stop it.

?This effort ultimately is designed to grab the retirement nest eggs of America?s senior citizens. It's the most remarkable movie Steven Spielberg has made in quite a spell, and one of the things that makes it remarkable is how it fulfills those expectations by simultaneously ignoring and transcending them.

Lincoln paints a powerful and compelling portrait of the man who has become an icon. We don't need to see more of his life to understand how rare a figure he was - this window is more than sufficient.

Lincoln offers proof of what magic can happen when an actor falls in love with his character. Because as great as Day-Lewis has been in his many parts, he has never seemed quite so smitten.

The film masterfully captures the dual dilemmas facing the president in the final months of his life: how to bring the war between the states to an end, and how to eradicate slavery, once and for all.

Lincoln is a stirring reminder that politics can be noble. Might there be a lesson here for today's shrill D.C. discourse? 'Tis a consummation devoutly to be wished.

Day-Lewis' voice is thin and reedy, which jibes with historical accounts but subverts our expectations. His attitude makes listeners lean in, and so do we, magnetized by his kindly reserve.

The weight of history is certainly present in every scene, but so are the undeniable correlations between past and present that make it feel so immediate and pertinent.

The very talented cast of this film is put to good use, thanks to Spielberg's sure direction and a strong script, written by Tony Kushner ('Munich').

Perhaps the most restrained and grown-up movie of [Spielberg's] career.

Daniel Day-Lewis is picture-perfect as 'Lincoln.'

Spielberg respects his audience's intelligence enough to tell the complex story and maintain a great deal of historical accuracy.

Why don't we give the best actor Oscar to Daniel Day-Lewis right now and save everyone a lot of trouble?

A poignant portrait of Lincoln's last days, time spent as a marked man making his appointed rounds en route to his rendezvous with destiny.

The best aspect of Lincoln is the stellar performance by Daniel Day-Lewis as Abraham Lincoln. Day-Lewis always is devoted to finding the authenticity.

Lincoln's cast gets high marks for making the film more entertaining than it has any right to be.

Superlative and spellbinding, this surprisingly relevant observation on the essence of leadership is, undoubtedly, one of the best pictures of the year.

Figuratively, at its visual core, 'Lincoln' is a collection of Mathew Brady photos come to life. Daniel Day-Lewis dominates. His Oscar worthy performance encompasses greatness...(He) IS Lincoln.

For all its good intentions and spurts of innovation, it never really comes alive as living, breathing history. Instead, it too often plays like an audio reading of the Congressional Record, with some unwieldy domestic scenes tossed in for good measure.

What I wanted to say to Daniel Day-Lewis and Sally Field: for God's sake, just stop and take your Oscars...you're breaking my heart and you're killing me.

Too long, too many side stories but great work from Daniel Day-Lewis. Director Steven Spielberg often shoots him in poses that make him look like Lincoln's famous penny.

No matter what, Lincoln is a sharp and patient movie that compares well to other contemplative films seen in recent years. Like The Social Network or Moneyball, we step inside the process and explore it in vivid detail.

A lively, intelligent, and even fun examination of how one man inspired America to change forever.

Lincoln lives, vividly, in Daniel Day-Lewis' performance.
